oreo brookies
These turned out to be a pretty thick and rich brownie! I liked the layer of sweetness from the oreo cream and they have tons of chocolate! They did take a little longer to cook than I had anticipated, but the end result was worth it. I would use a slightly larger pan for the full batch or just make a half batch in the future so the brookies aren’t quite so thick.
Recipe (Adapted from What’s Gabby Cooking)
Boxed brownie mix (you could use homemade but I used a nice box for this, mine needed an egg, ¼ cup vegetable oil, and ¼ cup water)
1 package Oreos
1 cup butter
½ cup brown sugar
1 ½ cup sugar
2 eggs
2 tsp vanilla
2 ½ cup flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
2 cups chocolate chips
Preheat the oven to 350F and line a baking pan with parchment paper. It makes it much easier to get the brownies out of the pan. Once they cool you can use the hanging out pieces as handles to remove the brownies and then cut them on a cutting board with a proper knife.
I started with the cookie dough layer: cream the butter and sugars together, then add the vanilla and eggs. Next add the flour, salt, baking soda, and baking powder and mix until incorporated. Lastly add the chocolate chips then press the cookie dough into the bottom of your lined baking pan.
Add a layer of non-overlapping oreos. Mix up your brownies according to the package directions. If you have a homemade recipe you could use that instead if you wish. Spread the brownie batter over the oreos and bake. I started to check on them at 30 minutes but it took almost 50 minutes to fully bake. Allow to fully cool before cutting.
